Instant Pot Pulled Pork

Ingredients
Dry Rub
- 3 tbsp brown sugar
- 2 tsp kosher salt
- 1 tsp ground mustard
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp white pepper
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/8 tsp fresh cracked black pepper
Other Ingredients
- 2 tbsp vegetable oil
- 4 lb pork butt roast, cut into 4 equal sized chunks
- 1.5 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp liquid smoke
- 1 cup BBQ sauce
- 1 pack buns
Instructions
- Put dry rub with pork in a gallon bag and shake until well coated.
- Turn on sauté mode and heat oil.
- Once hot, add a couple pieces of pork to the pot. Do not crowd the pot. Let sit/sear for 2 minutes on each side, then turn and repeat for each side. Remove to a plate and repeat with remaining pork.
- Add a little broth and deglaze with a wooden spoon.
- Add remaining broth, Worcestershire sauce and liquid smoke, then the pork. Cancel sauté mode.
- Pressure cook on high for 60 minutes, then let pressure release naturally for at least 20 minutes.
- Shred and serve with BBQ sauce and buns.
