Instant Pot Pulled Pork

Ingredients
  

Dry Rub

  • 3 tbsp brown sugar
  • 2 tsp kosher salt
  • 1 tsp ground mustard
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/8 tsp fresh cracked black pepper

Other Ingredients

  • 2 tbsp vegetable oil
  • 4 lb pork butt roast, cut into 4 equal sized chunks
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • 1 cup BBQ sauce
  • 1 pack buns

Instructions
 

  • Put dry rub with pork in a gallon bag and shake until well coated.
  • Turn on sauté mode and heat oil.
  • Once hot, add a couple pieces of pork to the pot. Do not crowd the pot. Let sit/sear for 2 minutes on each side, then turn and repeat for each side. Remove to a plate and repeat with remaining pork.
  • Add a little broth and deglaze with a wooden spoon.
  • Add remaining broth, Worcestershire sauce and liquid smoke, then the pork. Cancel sauté mode.
  • Pressure cook on high for 60 minutes, then let pressure release naturally for at least 20 minutes.
  • Shred and serve with BBQ sauce and buns.
